Ingredients
1 package of Zuma Valley Young Coconut Meat
2 cups chopped vegetables
1 tsp coconut or olive oil
garlic powder and sea salt to taste
Instructions
- Defrost and strain water from 1 pack Zuma Valley Coconut Meat.
- Chop your favorite veggies.
- In a bowl toss all in coconut or olive oil, garlic powder and sea salt.
- Transfer mixture to a pan or baking sheet and roast for about 20 minutes at 400°F, turn it over and roast an additional 20 minutes. Enjoy!
